Vegan Street Tacos

vegan tacosMost Mexican food and flavors can easily be made vegan! I just whipped this up last night from the contents in my fridge and thought I would show how easy and quick my meals are, while completely satisfying! So here’s my twist on Vegan Street Tacos!

Ingredients: (for 3 tacos)

Mix the ingredients below in a pan over medium heat for about 10 minutes. Covered will allow the beans to soften quicker:

  • 1 cup of drained black beans
  • 3 Tbsp of veggie broth
  • Chipotle seasonings to taste (cumin, paprika, pepper, chili powder- your choice!)
  • 1 Tbsp Sriracha
  • 2-3 Tbsp Nutritional Yeast

In separate bowl, mix: (Let sit for 5-10 mins)

  • 1 cup bagged coleslaw
  • Vegan Chipotle Mayo (I used Sir Kensington’s Fabanaise, found at Shoprite, or just add sriracha to vegan mayo!)
  • 2 Tbsp apple cider vinegar

Then, in a bowl mix:

  • 1/2 cup of Fresh salsa
  • 1 chopped mango (optional)
  • squeeze of lime juice or Young Living Lime Essential Oil
  • fresh cilantro (optional)

Warm up 3 whole wheat tortillas by letting them sit over an open flame, and then pile in the black beans, salsa, and chipotle coleslaw and enjoy! Happy eating!
