Mashed Chickpea “Tuna” Salad

Transitioning over from meat to beans? With this play on Tuna/Chicken salad, you won’t even notice the difference! My dad couldn’t believe it was actually chickpeas! Beans are very high in fiber and low in fat- so if you’re looking for that beach body, beans are the way to go.

Ingredients:

  • 1 can of chickpeas, drained and rinsed
  • 1 chopped celery stalk
  • 1/2 chopped red bell pepper
  • 1/4 chopped red onion
  • 2 Tbs mustard
  • 4 Tbs vegan mayo (hellman’s has vegan mayo!!)
  • 1 Tbs apple cider vinegar
  • lemon juice
  • salt & pepper

Directions:

  1. Mash chickpeas in a bowl to the consistency of what tuna would look like
  2. Add all veggie ingredients and stir to combine
  3. Add vegan mayo, mustard, apple cider vinegar and lemon juice, mix it up until dressing is throughout, add salt/pepper if desired
  4. Eat out of the bowl, add to a wrap and roll it up, or take crackers and use it as a dip! (also great for parties as a dip too!)
