Lentil Salad 3 Ways!

Lentils are one of the best things to add to a salad to leave you full longer, without that lethargic feeling of eating way too much. According to NutritionFacts.Org, a diet rich in lentils and other legumes may help reduce cholesterol, hypertension, and the risk of prediabetes, fibrocystic breast disease, and prostate cancer proliferation. Lentils and other legumes may offer significant anti-inflammatory effects as well. The best way to cook lentils is just make two cups (it turns out to be a lot more than you think) so you can add  them to numerous salads throughout the week.  Here’s 3 recipes i use when making salads for the week for lunch!

1. Lentil & Beet Salad with Mustard Vinaigrette

  • 1/2 cup of cooked lentils (cooked in veggie broth for extra taste, or water)
  • 1 chopped cooked beets (Love Beets* brand is my favorite because they’re already cooked!)
  • 1/4 cup chopped red onion
  • 2 handfuls of spinach/ spring mix
  • >>Mustard Vinaigrette: add ingredients in a small mason jar, & shake up:
    • 2 TBS mustard
    • 2 TBS apple cider vinegar or red wine vinegar
    • 2 TBS agave nectar or maple syrup
    • water for consistency

2. Arugula & Lentil Salad with Fresh Lemon Juice

  • 2 handfuls of arugula
  • 1/2 cup of cooked lentils
  • 1/4 chopped red onion
  • 1/2 chopped cucumber
  • 1/4 sunflower seeds or pumpkin seeds
  • 1 chopped apple
  • handful of heirloom tomatoes cut in half
  • >>Dressing: drizzle salad with lemon juice & sea salt to taste

3. Warm Balsamic Mushrooms & Lentil Salad with Sweet Balsamic Date Dressing

  • 2 handfuls of baby bella mushrooms, coat in 2 TBS soy sauce, garlic powder, 3 TBS balsamic vinegar, 1/2 tsp thyme &  broil at 425 degrees for 15 minutes
  • 1 chopped zucchini, broiled at same temperature on same pan with salt & pepper
  • 1/2 cup cooked lentils
  • 2 handfuls of spinach
  • >> Sweet Balsamic & Date Dressing: in nutribullet or small blender:
    • 3 TBS balsamic vinegar
    • 2-3 pitted dates (soaked in water for 5 minutes)
    • pinch of salt
    • water for consistency
