Easy Asian-Inspired Vegan Bowl

When you have a lot of veggies in the house, it’s easy to mix them up through recipes inspired by different cultures. Today after an early morning class, I decided to mix up some colorful veggies and salty sauce to replenish my body after a sweaty asana

  • Handful of chopped red cabbage
  • 1 thinly sliced carrot
  • Handful of broccoli florets
  • Handful of sliced baby bell mushrooms
  • ¼ cup of white onion
  • ½ bag of Cauliflower Rice
  • Handful of cashews
  • 2 tbs teriyaki sauce
  • salt & pepper
  • 1 Tbs Extra Virgin Olive Oil
  • 1 Tbs white vinegar

 

Directions:

  1. Follow directions on bag of Cauliflower Rice (ready in 5 minutes) just sauté rice in a big pan with vegan butter and add salt and pepper to taste
  2. Steam handful of broccoli
  3. Sauté chopped onion & mushrooms over vegan butter and salt & pepper
  4. Add steamed broccoli over the onion and mushrooms then add teriyaki sauce (or soy sauce)
  5. Add a few scoops of the cauliflower rice over the veggies
  6. In a separate bowl, throw together the red cabbage, carrots and cashews, then add salt & pepper, olive oil and white vinegar, and shake it up
  7. In a bowl, toss the cauliflower rice, sautéed veggies, and carrot, red cabbage, cashew topping over and mix it all up!
